Another architectural umbellifer, this week’s enormous carrot is Angelica sylvestris, captured here in the act of unfurling her flowers. Probably the proudest horticultural achievement of my childhood was raising a single plant of angelica from seed – it grew to at least six feet high, muscling all else aside in the small flower bed I’d been allotted in which to indulge my nascent gardening activities. Then, we knew it really only as a candied baking ingredient, so its arrival as a towering presence by the shed door was something of a surprise. Now, I’d squeeze it into any vaguely culinary bed in want of a bit of structure, and enjoy its mild aniseed flavour as a bonus.
